Spring!

Asparagus, kale, chickpeas feta, 8 minute eggs, fried bread! I picked up some tasty asparagus at the Market on Sunday, then cleaned out my fridge and pantry for a tasty Sunday night supper.

The kale and asparagus were pan-fried, the chickpeas dressed with a simple marinade of lemon, olive oil, salt and pepper. I’ve almost finished off the block of feta from Gothberg Farm and really need to replenish my stock.
